Sweet vs Sour Crude
The other number, besides API gravity, that decides what a barrel of oil is worth
Think of two batches of flour, one clean and one with small amounts of grit mixed in. Both can technically be baked into bread, but the gritty batch needs an extra sieving step before it is usable, and a baker will pay less for it precisely because of that extra work. Crude oil has an almost identical distinction, except the grit is sulphur.
Sweet crude contains a low concentration of sulphur, conventionally defined as below 0.5 percent by weight. Sour crude contains more. The label is literal and old, dating back to when field workers would taste crude oil to judge its quality, and low sulphur crude genuinely tasted comparatively sweeter. Sweet crude commands a premium because it is cheaper and simpler to refine into fuels that meet modern low sulphur emission standards, without needing extensive desulphurisation. Sour crude needs that extra processing step, so it trades at a discount, sometimes a very large one, to compensate the refiner for the added cost and complexity.
This is precisely why refinery complexity matters so much, and why it appears again and again across this site's oil and gas coverage. Reliance built one of the most complex refineries in the world at Jamnagar specifically so it could buy discounted heavy, sour crude that simpler refiners cannot economically process, and still turn out premium, low sulphur fuel at the other end. The discount on sour crude is the whole reason that complexity pays for itself over time.
The sweet versus sour distinction became front page news for a different reason after 2022, when India dramatically increased its purchases of Russian Urals crude, a medium sour grade, at a steep discount after Western buyers pulled back following the invasion of Ukraine. Indian refiners with sufficient complexity, particularly Reliance and Nayara Energy, were able to absorb that sour, discounted crude and convert it into refined fuel, some of which was then exported at prices set by the sweeter, pricier global benchmark, capturing the spread in between.
Whenever a refiner's quarterly results mention a shift in crude sourcing mix, sweet versus sour is very often the real story sitting underneath API gravity, because between them the two properties decide almost the entire economics of what any single barrel is worth to that specific refinery.
